Restaurant Chef – Japanese Specialty Restaurant

About the role

The Restaurant Chef will lead the culinary operations of Sekka, the Japanese specialty restaurant at Four Seasons Gstaad. Reporting to the Executive Chef, you will shape the Omakase concept and deliver an intimate, high‑end dining experience.

Key responsibilities

• Lead and manage daily kitchen operations, ensuring product quality, consistency and guest satisfaction.
• Define, develop and evolve Sekka’s culinary identity, Omakase menus, seasonal offerings and signature dishes.
• Source premium Japanese ingredients, seafood and specialty products, building strong supplier relationships.
• Train, develop and inspire a small, specialized culinary team while maintaining high standards of craftsmanship and precision.
• Manage food cost performance, inventory, production planning and ensure compliance with HACCP, food safety and health regulations.

Required profile

• Minimum 4 years of culinary leadership experience in high‑end Japanese restaurants, luxury hospitality or fine‑dining Omakase concepts.
• Deep expertise in Japanese cuisine, premium seafood, seasonal sourcing and traditional preparation techniques.
• Strong leadership and team‑development skills with the ability to inspire a specialized kitchen crew.
• Fluent English; additional languages are a plus.
• Professional culinary qualification; Japanese culinary certifications or advanced Omakase training are highly advantageous.
