Head of Production / Head Baker (Artisan Bakery)

About the role

We are launching an ambitious artisan bakery and café in Cham, Zug, and need a seasoned professional to lead production from day one. As Head of Production and Head Baker you will shape the bakery’s processes, quality standards, and team culture while delivering high‑quality breads and viennoiserie.

Key responsibilities

• Organise and manage daily production schedules.
• Produce artisan breads, scalded breads, long‑fermentation loaves and laminated dough items.
• Maintain strict quality and consistency standards.
• Develop, refine and optimise production workflows.
• Recruit, train and lead a skilled production team.
• Contribute to new product development and recipe innovation.
• Plan production volumes to match demand and ensure operational efficiency.

Required profile

• At least 5 years of experience in artisan bread baking.
• Proven expertise with viennoiserie and laminated doughs.
• Deep understanding of fermentation, long‑fermentation and sourdough techniques.
• Passion for craftsmanship, flavour and product excellence.
• Leadership or production‑management experience is a strong advantage.
• Motivation to grow with a brand from its inception.
