About the role
We are seeking a Head of Production / Head Baker to lead the launch of a new artisan bakery in Cham, Switzerland. The role combines expertise in high‑quality viennoiserie with deep knowledge of modern craft bread techniques, including long fermentation and sourdough.
Key responsibilities
- Organise and manage daily production of artisan breads and laminated dough products.
- Maintain high quality and production standards.
- Develop and improve production processes.
- Build, train and lead the production team.
- Participate in product development and recipe refinement.
- Plan production workflows to ensure consistency.
Required profile
- Minimum 5 years of experience in artisan bread baking.
- Proven experience with viennoiserie and laminated doughs.
- Strong understanding of fermentation and sourdough processes.
- Passion for craftsmanship, flavour and product quality.
- Leadership or production management experience is a strong advantage.
- Motivation to grow with a new project from the beginning.
