Restaurant Director – Il Lago

About the role

The Director of Il Lago leads the Michelin‑starred restaurant at Four Seasons Hotel des Bergues Geneva, overseeing all aspects of service, team management, and guest experience.

Key responsibilities

• Recruit, train, and develop the restaurant team, ensuring compliance with Four Seasons standards, hygiene rules, and mandatory PCI training.
• Maintain guest satisfaction scores (Médalia, Forbes, LQA) and manage client feedback.
• Control the outlet’s financial performance, including budgeting, profit and loss, food & beverage cost, waste reduction, and green initiatives.
• Develop seasonal menus in collaboration with the kitchen, oversee inventory, stock rotation, and equipment maintenance.
• Coordinate daily operations, scheduling, payroll, and performance evaluations for the team.

Required profile

• Fluent in French and English, both written and spoken; additional language is a plus.
• Extensive experience in fine‑dining service, wine and food knowledge, and high‑end customer relations.
• Strong leadership, elegant presence, empathy, and the ability to coach and motivate staff.
• Organizational and managerial skills to handle purchasing forecasts, cost control, and administrative duties.

Required skills

• Proficiency with Mirus, Ontrack, Birchstreet, and Micros point‑of‑sale systems.
• Advanced use of Microsoft Word, Outlook, and Excel.
• Knowledge of food & beverage ordering, inventory management, and hygiene standards.
