F&B Director

About the role

The Mont Cervin Palace, a member of The Leading Hotels of the World, is looking for an F&B Director to join its team in Zermatt. The role oversees all food and beverage operations across restaurants, bar, breakfast, room service and events, and leads the strategic development of the hotel's F&B offering.

Key responsibilities

• Manage F&B operations and ensure consistent luxury service standards and guest experience in line with LQA requirements.
• Coordinate service, kitchen, stewarding and back-of-house teams, and monitor covers, revenue, costs and guest feedback.
• Drive revenue growth through concept development, seasonal activations, upselling and cross-selling.
• Manage budgets, forecasting, cost control, purchasing and inventory.
• Ensure compliance with hygiene, safety, HACCP and quality standards, and handle guest complaints and VIP requests.
• Oversee cash handling, billing and duty management shifts.
• Recruit, train and develop F&B teams, set staffing levels for seasonal peaks, and run performance management and coaching.

Required profile

• Proven leader with experience in F&B management in 5-star luxury hotels or palaces.
• Strong operational background in multi-outlet settings and seasonal resort operations.
• Solid knowledge of fine dining standards; Michelin-star experience is a strong advantage.
• Degree or diploma in Hospitality Management or equivalent professional training.
• Excellent communication skills and a hands-on leadership style.
